A yummy and easy recipe!

This last Sunday we were having a hard time deciding what to do with the four frozen chicken breasts sitting on our counter. You see, we don't go to church till noon...when we get home from church at a quarter after three we have some pretty hungry kiddos! Not to mention all of the hungry adults! We try to put something in the oven when we leave relying on our start timer on the oven! But, we've done everything you can think of with chicken and we wanted something new, something fresh and something tasty!Leave it to my Mother-In-Law to think of something a little strange. I questioned her sanity when she told me what she was thinking and you will question mine too....BUT when you taste it.....

4 chicken breasts, whole or cut into smaller chunks (ours were frozen)
1 bottle catalina dressing
1 pkg. dry onion soup mix
1 can cranberry sauce

Place chicken in 9 x 13 pan. Mix cranberry sauce, onion soup mix and catalina in a bowl. pour over chicken. Bake at 350 degrees till chicken is done. Enjoy!

The sauce is a beautiful cranberry red color....it's sweet and tangy. We served ours with mashed potatoes and green beans. It was YUMMY!!!

Movie, baking, marriage

Have you seen the movie The Bucket List? I thought it was cute. I got so into the night I watched it that Cole came out and I was crying....well sobbing really!

Anyhow I have been trying to make and keep some goals....I seem to have a hard time with keeping them though. So I thought I'd make some long term goals I may be able to keep....I have things I'd love to do, so I think I will start there. I will post my list in a few days. Then y'all can help me stay on track!

Back to reality, right? I spent the day yesterday baking yesterday. I baked 6 loaves of bread and a batch of molasses ginger cookies, yummy! I hate to bake so this was a big accomplishment for me.

Well with the weather change and the issue Cole's had we've been having a rough time here at the Henderson home. Things are looking up but there for a few weeks we weren't so sure things would be okay. I've mentioned a quick over view a couple of weeks ago and may go into depth at another time, but I do have to say I am relieved that life is back on track, for the most part. We are going to start taking time out for our marriage. I had a bishop that encouraged couple to make date night a priority. I have two different friends who have made weekly date nights an official night in their homes. Cole and I have decided that it is time to make these nights a priority in ours too!

We are working on simplifying our lives....stay tuned for that post....coming tomorrow....

Cooking

I feel like I have been cooking for days. The worst part is I haven't.

My sister and her boyfriend picked some peaches from a friends house. When they were picked they got a little bruised. When they were brought to me they needed to be used asap. So I started blanching and removing skins. I froze four different batches so I can make peach jam at a latter date. I ran out of Ziploc baggies and went ahead and made two batches of jam from what was left of the peaches. It is YUMMY!!!!

Before I had even finished with the peaches I inherited about 15 lbs if apples. After I finished the peaches, I started apple sauce. I have made 3 batches of apple sauce and have one more to make. I am trying to decide if I should make apple butter or if I should just can the apple sauce.

So after making three meals a day for Grandma and Cameron and all of the canning and cooking and prepping of the fruit, I never want to look at my kitchen again. Some of that can be contributed to how messy it is and my lack of motivation in cleaning it right at the moment.

I have enjoyed my self though so no worries! I have found that I really enjoy the prepping and cooking and canning of the many few fruits I have done. I am hoping to have a garden next year so I can can dome veggies. And I am still planning on canning pears and more peaches.

Alas, The kitchen calls.
